Grilled Apricot, Yogurt, Honey & Pistachio

I had the pleasure of working with one of my favorite iconic brands, Libby’s, last year…and I’m so excited to be continuing our partnership for another year! I use so many of Libby’s products in everyday cooking and always seem to have something from Libby’s in my pantry!

So when they asked me to create some fun recipes using their products, I jumped at the chance!

This simple brunch idea is one of my favorites! I don’t know about you but I don’t use apricots that often, so this recipe is a really fun way to try something different.

Grilling the apricots brings out their natural sweetness and makes for a beautiful brunch presentation. Start by heating your grill pan to medium heat. Grill apricots flat side down till marks appear.

Remove from heat and let them cool on a separate plate.

In a foor processor, pulse the pistachios a couple times. You can also rough chop with a knife.

Once apricots are cool. Layer them with your yogurt, honey and pistachios.

Libby’s Grilled Apricot Halves with Yogurt, Honey & Pistachio

What you need:
1 can Libby’s Apricot Halves
1 c greek yogurt
1-2 T honey or agave
1-2 T of chopped pistachio

How to:
Using a nonstick stovetop grill pan, grill the flat side of each apricot on medium heat till grill marks appear. Remove from heat and let cool.
Layer yogurt, apricots, honey and pistachio and enjoy!
