Artichoke Dippers & Chipotle Aioli

When I think of treats…I think salty, not sweet..and I always go the fried route! Maybe it’s the Texan in me? So when I went to my kitchen looking for a treat and found an empty pantry staring at me, I was less than thrilled. Hey, it happens…

However, these are the times that I truly shine!

What I found really surprised me, and it turned out so delicious that I had to share!

I had 1 box of frozen artichoke hearts, a lemon, yogurt, mayo…

I knew I could figure something out. I pan fried them in a baby amount of flour and made a yogurt/mayo aioli with chipotle. Honestly, they were SO good! Simple, but great!

Wash them down with an ice cold beer this summer and high five me when we see each other some time.

Vegetable Oil
1 box frozen artichoke hearts, defrosted and patted dry on a paper towel
1/2 cup flour, seasoned (salt & pepper or seasoned salt)

For Chipotle Aioli:
1/4 C. greek yogurt
1/4 C. mayo
1 tbsp loom juice
1 tsp lemon zest
1 small clove garlic grated
1/4 tsp Chipotle Powder

In a medium skillet warm oil to medium heat. Toss Artichoke Hearts in flour and shake off excess. Place 3 hearts in hot oil, till they are golden brown, flipping once. Place on paper towel to drain.

Do not overcrowd your skillet. It will lower the heat of your oil and burn the flour that falls to the bottom of your skillet too quickly.
