I found these huge oyster mushrooms at the Ojai, Ca farmer’s market and had to buy them! They were huge and full of woody flavor. If you see these at your local farmer’s market, give them a try. If you are buying out of the grocery store, this recipe totally still works. Make sure you use fresh thyme and a good quality olive oil.
If you don’t have access to a grill you can make these on a grill pan or a skillet. The great marks the grill leaves behind will be the only difference.
2 cloves of garlic, pressed
Big squeeze of lemon
A good drizzle of olive oil
Generous pinch of sea salt
1 tbsp of fresh thyme leaves
If they are big mushrooms like these, slice them in half. Toss mushrooms in a mixing bowl with olive oil, lemon, thyme, sea salt and garlic. Let marinate for 20 minutes then arrange on a hot grill.
